I was gonna make a whole spiel about "oh you should build blah and blah on gp because of blah" but that would be me being a knowitall douchebag without really being helpful. Here's some info that'll be actually useful in the long run.
Firstly, most item passives don't stack, so you usually only want one of an item in any given build.
Think about the enemy you're facing when grabbing defensive items. Example: Attack damage is countered by Frozen Heart/ Randuin's Omen. Magic damage is countered by Banshee's Veil / Spirit Visage.
I say this next one because you opted for Trinity Force which gives a little of most stats, you don't need to cover all the stats in order to do well. Choose a small set of stats that are core to your playstyle and build mostly around those stats. That's not to say you shouldn't build any defense items, but 3-4 of your items should be focused solely on your builds core stats. If you're building Trinity Force, the core stats would be crit chance and damage.
Finally, experiment outside of the recommended items. A lot of champions have weird builds that can actually be quite strong competitively, or just for fun. It also helps that Gangplank is super flexible in terms of what stats are good on him. I myself turned him into a mage of all things (relevant self-advertising), and I've seen the reverse happen with the mage Malzahar being used as an ad carry. Just keep your item builds varied and try building for the situation. Youll learn more about the champion and the game that way. Sorry for the lecture :)
