Tips
after a little ways into the game if i find i need more attack speed after i have my starks i start constantly buying elixar of agility as well
with runes and olaf's ult's passive and starks you have a boatload of armor pen and almost everyone will have 0 armor except tanks and if you end up getting ghostblade their armor will be very very small unless they are stacking armor
this is one reason why the small boost in ad from hexdrinker is very helpfull because most of the time none of it will be deminished
dont use your ult untill you think your starting to be focused then ult up and get ignore all the cc do ult in a close fight even if they do not have any cc because it also reduces dmg by a flat amount which can turn the tide of the fight but dont use it to soon so that it gets wasted also can be used to run away if your still unable to kill someone 1v1
constantly spam your abilities after about mid game because olaf almost never runs out of mana that means using ur abilities on creeps to push faster!
i like the health seals for more durrability early game as well as increased dmg. dodge or the cheaper armor seals are also good choices. Hp quints are also a good choice if you feel like you have too much armor pen.
i like to grab the minons dmg in the offensive tree so i can jungle if my team needs a jungler in which case grab visious strikes at lvl 1 then undertow (constant spamming of undertow if you have bluebuff) building the the hp in the defensive tree for obvious reasons greatly increasing his durablity dodge also helps chasing enemy champs with a slight move buff if you dodge minion attacks

ganks are starting to take place you should have atleast your phange and merc treads as well as a fortitude potion if you dont i suggest you stick around to farming and when your not ganking you should be farming as much as you can from this point in my build i always buy fortitude potions and keep them with you so you can constantly keep that buff because the health helps with survivability as well as giving you more dmg (so its like it increases dmg in two ways thanks to viscious strikes) then i build into my starks furvor this both helps your team as well as gives you even more lifesteal to really help u stick on an enemy and keep yourself alive in the process.
at this point the main items in my core build are finished (merc tread, frozen malet and Starks) then i decide if my team needs more pushing power i like to grab madreds next exspecially if your against a beefy team or have problems with tanks. if your having problems chasing i suggest going for the ghostblade instead of the madreds. or if the enemy team has alot of mages that are doing most of the dmg to you then i would grab an item with magic resist like the hexdrinker (which isnt a common item but i like it for more damage as well as magic resist and a sheild when ur low on hp so you can live longer at that time which is when your going to do the most dps) if your having problems with trynd or other ad champs i suggest thornmail. If the team is well rounded and your taking equal dmg from everywere i suggest GA which also discourages them from targeting your first in a teamfight so you can really outlast the battle.
Play style for late game is normally pretty straight forward push with your team as you will be able to push hard and take out enemy team squissies or target whoever is targetting your squissies
