Proof for the disbelievers
I know most of you won't believe this build is any good but that's okay. This build isn't for you. It's for the minority who know how to play the game. I had four people add me from those games wanting to play other rounds with me because I kept acing in every game.
Oh and, the low score in the middle game was because the other team surrendered exactly at 20 minutes.
Have you ever played with dominoes? You will when you use this build. Turret after turret will fall just because of your AD, AS and Off-Tank build. Does it work? Yes. I've tried it and continue to try it every time I play Sion.
Some of you will quickly scroll down to the "Reply" box and QQ about how terrible an AD Sion is. Chances are you've never tried it or, if you have, you didn't try my build. I know it works because I've tried it numerous times and I never get tired of it. I will play this build of Sion whenever I'm having a losing streak with other champions. I'll just switch to Sion and use this build and I'm guaranteed a win. If not a win, I'll be satisfied that the loss didn't come because of me.
Masteries: Standard 9-21-0
Runes: Armor Penetration Marks, Armor Seals, Magic Resist per Level Glyphs and Armor Penetration Quintessences.
Items are quite straight forward. All based on Attack Damage, Speed and Health. In this build, I'm focused on durability and damage.
Why this build?
I like AD Sion a million times more than AP Sion. If you don't agree, read this build before commenting. You clearly don't know what you're talking about or you've been across some terrible AD Sion builds. Not this one though.
If you don't believe me, wait till I meet you on Summoner's Rift. I long for it.
Two of Sion's skills are based on AD. His ultimate is Lifesteal and Attack Speed. Come on. How is that going to help me if I'm an AP Sion?
Sion's Enrage causes good damage and we'll have it running from minute 1 till the end of the game. Every time you hit an enemy champion, or minion, you'll be losing 6, 8, 10, 12, 14 Health Points. Not much? That's 70 HPs in 5 seconds. Add that to enemy champions focusing you. Most AP Sions will have something like 20-30 health regen per 5 seconds. You're causing more damage to yourself than that! How much more when being focused?
Don't comment if you haven't tried this build. I don't want feedback from some player whose main champion is Twitch or Xin Zhao. Three quarters of the game you're either invisible so no one can see where you are or you're the easiest champion to play in LoL.

I offer you a game, or two, or however many it takes for you to realize that this build works. Don't blame it on your team not knowing how to play. You just can't beat this AD Sion. You'll just be another domino piece waiting your turn to be knocked down.

Quite standard really. Not looking for anything too special. AD and Off-Tank runes. Fits with the build.
You may play around and experiment here if you want. Another suitable role could also be,

To replace the ones above. They could work just as effectively but I like the added Magic Resist.

We're building an AD/Off-Tank Sion. Any extra HP and HP Regen is welcome.
In short, we're going with these items:
Berzerker's Greaves Berzerker's Greaves
The Black Cleaver
Force of Nature
It doesn't matter much which order you put the last three items. It all depends on the other team. If you feel like their AP is overpowering you, especially if they have a Kassadin for example, just switch the order to get Force Of Nature before Frozen Mallet.
If you find that you're not losing a lot of health in team fights or in laning, just go for Black Cleaver earlier to boost your Attack Damage and Attack Speed. Play around with the order however suitable you feel it is in order to match the other team.
Otherwise, the order above should be straight forward and sweet.
Pros / Cons
What I love about this build is pretty much everything about it. Two of Sion's skills are based on AP and two are based on AD, more or less. Your ultimate gives you extra life-steal and attack speed. Come on. How will that benefit a slow Sion with 400 AP?

"Sorry team, waiting for my cooldowns because I'm useless otherwise."
An Off-Tank Sion means you stay in a team fight for longer and are able to defend your team. You take the hits and keep your teammates alive so they can carry the load while you respawn and buy your next items.
Two of Sion's skills are based on AP. You know what? Just look at my Pro's section. I don't think think I can add anything more here.
