AP carry has something like 2 stats to scale with (AP/CDR), and scales fairly linearly along them (CDR is capped at 40% and buying X ap pretty much always gets you Y more damage due to the bursty nature of casters). AD carry has 3 (AD, crit chance, AS) which all multiply off each other resulting in very quick, high scaling (a carry with 50 bonus damage, 50% crit, and 50% AS does a bunch more DPS than just +150 bonus damage). Not to mention there are more fancy passives for AD characters, such as the IE +crit damage passive and the black cleaver armor shred passive.
