Weird...in-game my Ryze has at least 500 xD anyways this build is ****ed up since the update :(

295 AP only, how can it be AP demon ? :P

I have been using Ryze long time now ( well not long, but I have made like 30 battles with him for now ) and I find that Ryze should have 500+ AP when he gets lvl 18 and this is how I build him up. For start I buy the ring, then I take buy protector and then I take books that have 15% cooldown.
I mean when u have huge AP u just kill so many enemis at the end ( I had 702 AP-s on match ).

But good guild tho.. :)

Thank you for the comment. Yes indeed I mixed it up with the Rabadon Deathcap, sorry. I use Deathfire Grasp because it also gives you Cooldown reduction (yes I am addicted to it but it is very useful).

Didn't vote, because I tend not to vote on builds for champions I don't know too well, and that includes Ryze. A couple comments though.

1) An error I noticed: "Another Rabadon's Deathcap - no it doesn't stack the 155 AP but you gain +30% AP and you will get to 500-550 AP and that's huge." You got it mixed up; it adds another 155 AP, but you don't get the 30% boost twice.

2) Deathfire Grasp: Normally, I think Deathfire Grasp is an amazing item and I would recommend it for most AP champions. Ryze, however, is the exception here because he already does a TON of burst damage. You say he needs it for tanky characters, but wouldn't Void Staff be a better choice for a tanky character because of the Magic Pen? And if you don't need the Magic Pen, you could get, say, a Lich Bane so that once you've blown your nukes your first auto-attack is actually useful.
