Xin Zhao
Start with Emberknife. Xin Zhao is a good Jungler in early game. Unless you have an advantage, do not fight Xin Zhao in the early game. He’s 1v1 is incredibly strong thanks to his Q and E. He uses his early stregths to invade your jungle and steak away camps when he spot you on the opposite site of the map. Xin Zhao has good objective control and can take them pretty easily. Make sure you keep the Dragon warded at all times so you can spot him before he is able to take it. He can avoids team fighting unless his ultimate R is up. But without it he is vulnerable and relatively easy to kill with an ally. Force team fights when his Ultimate Crescent Guard R is down to increase your chances of winning the fight. He is not afraid o repeatedly gank lanes. Xin Zhao is really good at ganking and can do so over and over again. To make it harder for Xin Zhao to get successful ganks off, make sure you place vision around his jungle entrances. This will give your allies enough time to back off and escape before he is able to reach their lane. Xin is vulnerable to CC during team fights, don’t ignore him. Focus him down when he engages. So try to hit him with your W from afar and then spam your E, at the end try to finish him with your R (if he can't use flash and dashes).

Champion Build Guide
Begin rolling out of sight, and then run it down the intended lane.
Try to roll always for 5 seconds before hitting the enemy, so you can deal the maximum damage.
As your R is a channel ability, make sure you activate your R after the enemy has used their CC to increase the chances of a lengthy channel.
Try to take an early Dragon as soon as your bottom and mid lane have priority.
Taking an early Dragon is quite easy for Nunu and very important.
If the enemy invades you, fight him when you are near a jungle camp as you can use Q
to gain health advantage. Instead, escape from him when you are in the river or not near a camp.
Go dragon at level 4 because you can easily solo it. Use Control Wards and Oracle Lens first to destroy possibly enemy wards around. For this reason take also the bottom Scuttle Crab as soon as possible.
If enemy jungler is fighing solo an objective like Dragon or Herald, always go for fighting. Because of your Q, you will win every battle.
Don't go 1 vs 1 in lane if there are objectives in the jungle. You can easily die and the enemy can take the objectives without problem.
Despite you are a Tank, consider that enemy can focus you once the fight is started, because Nunu is rather immobile, and because of this you must abandon the frontline and making the allies unprotected. So, build FULL TANK, and this problem is solved in the late game.
If enemies clump together and they stand close to one another, use your W to engage from afar and run into the enemy. You might be able to get a 5 person knock up. Use this strategy in team fight only, obviously.
Gank as much as you can in early game. Because of a previous tip and Nunu's passive AS buff, consider the bottom first in most cases. Use Always Control Wards and Oracle Lens before ganking however: if enemies have vision of you, ganks will fail.
