I think you view the world of chips/fries as too black-and-white. Depending on where you go, they can be all sorts of different sizes. Fries from Wendy's are quite a bit thicker than fries from McDonalds.
Would you only classify "fries" as the greasy, skinny oily kind then? With chips being thicker, fluffier potatoey ones?

Chips are luxury chunky chips. (Chips are better) Another point, you don't tend to add flavour to fries (such as vinegar) but you do to chips.

They are considerably thicker, they taste different and have a different texture. Also they're traditionally served in paper. Or at least cardboardy box thingies.
