I am not such a big fan of Trinity Force, but if it works for you then I'm glad.
And yeah, I've never been impressed with an AP Gragas. He can be fun, but he doesn't win games. Building him for physical damage and defense does. Nice to see I'm not the only one who thinks so.
Also, that last part is why I was a little hesitant to post this. I don't want people picking Gragas before me!
After shield and boots I get more cooldown to get my cooldown around 35% (40 is max) with soul shroud, which also makes sure you never run out of mana and adds health (added bonus the cooldown and mana regen are an aura, so good team item.)
This is enough health/armor and in quick games by now the game is coming to a close. For med/long games I get more movement speed using phantom dancer which adds to my crit, dodge and attack speed, and if I need MR I'll get force of nature as well (before phantom dancer if needed) so that my movement speed is through the roof and my health regen is nuts. After that the last spot goes to trinity force or warmogs if its a ridiculously long game.
Obviously I'm a big fan of being able to move quickly, hit and run, and survive, which is what gragas excels at. Being faster than everyone else will allow you to get in crazy situations for that suicidal kill and escape using cleanse and bodyslam. For this reason I actually build a 0/21/9 gragas. I choose ghost over exhaust (although exhaust is AWESOME) and the XP boost and regen bonus are equal to the dmg bonuses in the 1st skill tier. Lastly I use crit runes rather than armor pen because they work well with drunken rage and when I build phantom dancer the crits happen pretty frequently, keeping my damage somewhat respectable through the end game. Also use 2 cooldowns and a dodge quint rather than health.

Just played a game while writing this where I built heart of gold, boots, then leviathan (because of your suggestion) then shield then soul shard etc. Worked great and I definitely recommend it as an alternative. As gragas I rarely die and the assists or kills stack up pretty fast. Only loss is a delay in your cooldown reduction bonuses, but keeping heart of gold heart of gold and not building it into Randuin's Omen right away helps negate this as it accumulates gold.
Gragas is free this week so everybody is playing my main, not once have I seen an AP build be effective. But I like being the surprise badass gragas player so I really hope people don't catch on that gragas is a fkin beast.
Also, I only listed Tiamat as an ideal item. In my item section, I list several alternatives. I just had to put something in the top list.
I am a bit worried with your item picks tho. Phage+Leviatan+Brutalizer sounds more than OK, but later on.. Tiamat, hmm tbh i cant realy see the point. Yes, it does make you a better farmer, but it gives so little to your hero killing.
Isnt it better to get something more damaging so you could wipe out whole creep wave in 1 body slam?
Also, no AS hmm this will limit you to cd's anyway (and you didnt like it in AP build as i see) You will body slam and wait for cd coz hitting enemies with melee that is fast as 0.6 AS is like tickling. You are not AP based so your barrels will do nearly none damage and ulti will work as cc only not damage. That leaves you so cd dependant, even more than on AP build coz of usage of 1 skill.
