Introduction
This guide is meant for intermediate/advanced players who know basic LoL terminology and what Malphite does.
Now, let's get on to the good stuff.
You'll want to immediately get a mana crystal and 2 health pots. Rush catalyst and hopefully a pair of boots on your first trip back. Catalyst is Malphite's key to staying in lane.
Don't upgrade to Banshee's just yet, though. Make sure you grab a Sunfire first to help with farming and getting Malphite's armor/hp up.
Alright, now you can grab Banshee's. After that it really depends on the type of team you're playing against. Guardian angel is usually a must. I usually go for a Randuin's before that, though, for even more armor and a great slow for those annoying ad champs. Just read the enemy team and go for what you need. Most times you'll just end up with a boatload of armor to bulk up your slam. Other times you'll find yourself grabbing an abyssal scepter for some extra damage and magic resist. Etc.

Malphite is a very easy champion to play. Early gameplay revolves around sharding the **** out of your opponents and last hitting creeps. Try to wait for your rock shield to come up before harrassing, so that when you do get hit, your shield gets destroyed but they take some nice damage. Try not to use your shard nonstop, because you do need to keep some mana for your devastating ult/slam/shard combo. Other than that, shard away.
At level 6 is when things get serious. You've got your ult, and you're ready to melt some faces. Most half health/below half health champs (ripe for the picking since you've been sharding them like a maniac) can't stand up to Malphite's combo.
Basically, you ult in, knocking them into the air and immediately following with ground slam. This puts out roughly 500+ damage. Then once you shard [another 100+ dmg] and ignite them, it's over. They can try to run at that point, but they're pretty much screwed. Run 'em down and soak up some kills.
So: ult -> slam -> shard -> ignite. It's absolutely devastating. Try it.
Mid to late game is where you really start to shine. You've got some kills and maybe you've pushed the ol' tower down. When team fights begin and people start leaving their lanes, remember: you're the initiator. Malphite's ult/slam was built for initiating. Just make sure your team knows to move in and wreck faces as soon as you ult. Just find some nice, bunched-up enemies, particularly some squishy ad/ap champs, and give 'em hell. They'll regret ever thinking they could be within ult range and not suffer for it.

Gosh, I feel like I'm writing a speech. That's about it. Hope you enjoyed the guide, and please be sure to comment/let me know your thoughts. Sure, it's not a revolutionary build that'll make your jaws drop off, but hopefully it helps anyone who's looking for a good way to play/build Malphite.
Peace.
Peace.
