One of my favorites is my take on chicken piccata.
get chicken breasts...pound them down to be thin....flour...egg...bread crumbs...saute in olive oil. once brown...add 1/2 can chicken broth...2 lemons...capers...can of artichoke hearts...cover....simmer for 30 minutes.
I serve it with angel hair pasta with a butter and dill sauce...and a salad.
you can also make a white wine reduction sauce to go with it...delicious! (white wine..and flour...reduce down till thick...stir lots!)
