He has more damage and more healing than Mundo, but ONLY if he hits his Q's. Try to predict his Q placement and use your ult movement speed / Ghost to dodge them, and you should be able to kill him. Don't fight him early.
Camille
She will be stronger early, but once you get Sunfire you can beat her. Be very careful if you don't have ult. When she uses Hookshot towards you, you can easily throw a cleaver as she is dashing to mitigate the trade.
Darius
Has a very strong early lane. Farm with Q until you have Sunfire, then you can poke him down with Cleavers and then all in, but you MUST dodge his outside Q or he will win.
Fiora
She wins lane early and duels late. However, with clever movement in the midgame you can win fights. When she ults you, hug a wall so that one of her vitals cannot be attacked, which denies her healing.
Gangplank
He can easily poke you down with Grasp procs and Q to win early on, while being able to infuence the map with his R. Once you have rank 2 R and your first two items you have kill pressure. Until then, farm from distance and try to avoid his barrels.
Garen
New Garen with Conqueror will beat Mundo every time in a duel, but it is fairly easy to avoid fighting him. Late game however you should be more useful in teamfights, so try to farm as much as you can in lane.
Gnar
You cannot get near him early, bit his damage isn't too high, and by standing behind minions he cannot hit you with his boomerang. Once you get Sunfire, look to cleaver him, then run him down. His E has a high cooldown, so you can bait it and then re-engage.
Illaoi
Illaoi can simply shove the wave under turret, then E you as you try to get some CS. Expect to have a large CS deficit. However, if you can deny her getting fed, your influence lategame will be greater than hers. If your jungler tries to gank you, make them back off unless the Illaoi has low HP. If you can poke her with cleavers then you can kill her midgame with 2 items.
Irelia
If she stuns you early then she can win the trade. Never fight her until after rank 2 R. Try to fight her when you don't have many allied minions, to deny her healing and mobility.
Jax
Early on he has more kill pressure, but after Sunfire you can start to win fights. You should win most fights until he has TriForce + Shojin, in which case trades are fairly even, but you have better sustain.
Kled
Despite his Q nuking our healing, after Sunfire he has relatively little kill pressure. Don't try to kill him early as he can remount and kill you. Wait until he burns his W (fast attacks) on minions befire attempting to kill.
Malphite
You can sustain his Q poke and outdamage him with your own high magic damage.Beware of getting to low HP at level 6 as he has decent burst with his ult.
Maokai
His damage is very low and our cleavers can chunk him for good damage. Try not to dive him as he has good peel and can let the turret kill you for him.
Mordekaiser
He has free damage at no cost and good percent damage on his passive, while having good healing through runes. When he uses R he steals some of our stats, which lets him win every time. Never fight him, instead try to split push or be more useful in teamfights.
Nasus
One of the few lanes where Mundo can be the bully. If he runs Conqueror he can kill you, but you have good enough peel with your Cleavers that you can deny him the kill if he manages to win trades. At level 6 he can beat you but not after Sunfire.
Ornn
He has high early game damage which lets him beat you in trades. If you think you can kill him, make sure to dodge the last part of his W (fire breath) to avoid taking large %health damage.
Pantheon
He will beat you until you have rank 2 R. His early damage is very high, but later on his lack of a combat ultimate means you can beat him. Avoid going near him if his passive has at least 3 charges.
Renekton
Early game he will win every fight, but with levels and a couple of completed items you can beat him. Farm with cleavers.
Riven
It is easy to underestimate how much damage Riven can do, especially at level 6, so avoid fighting her. Once you have level 11 you can start to fight her.
Rumble
Rumble has very high damage in lane, so don't fight him. I would recommend rushing Spirit Visage. Once you have Visage + Sunfire you can kill him, but make sure not to stand in his R.
Shen
Shen has higher damage early game, so avoid fighting until level 6. When he uses his ult, you can grab some free turret plates with Demolish, and once you have Sunfire you can beat him every time.
Teemo
Take Dorans Shield and try to farm with cleavers. Build Spectre's Cowl into Sunfire. Eventually your sustain will be too much for him and you can run him down.
Tryndamere
Tryndamere has very high damage throughout the game. Early game be very careful of a level 2 all-in as he can kill you and snowball. You will be more useful late game as long as you watch the side lanes for his split pushing.
Urgot
Urgot with Conqueror will beat Mundo at all stages of the game. He has lots of percent health damage through his passive and a percent health execute in his R. Don't fight him in the side lanes. When teamfighting make sure he doesn't ult you or you can be easily killed.
Vayne
The bane of all juggernauts, a half-decent Vayne will destroy Mundo. Early game, let her push and try to get your jungler to gank for you as she is easy to kill via a gank. Expect to have a heavy CS deficit. Late game, NEVER fight when Vayne is also there as she can melt you in a couple of seconds. I always ban Vayne when I wan't to play Mundo.
Vladimir
The early lane is fairly even vs Vlad, neither of you have much kill pressure. Build Null Mantle into Sunfire. If you can whittle him down with Cleavers then you can kill him, but don't turret dive on your own as he has invulnerability and lots of healing. Late game keep Vlad in the side lanes as he can destroy teamfights.
Yasuo
He beats you until you get Sunfire. Let him kill some of your minions before fighting to reduce his dashes and making sure your cleavers hit him.
Yorick
When Yorick has his Maiden he is very difficult for Mundo to solo kill. Early lane he will beat you as well. Try to poke his Maiden down to kill it, then when you are at full health with your own R you can take him down. This is the only circumstance in which you can kill him.
