Well i always go with TF->Stark->IE->Def_item->Def_item.
I also noticed the drop of damage at that state and that is why i go for IE. (TBC works well as well)

Stark is a kinda bad item..
IE is a very meh item for Irelia.
Go for Wriggles, Gunblade or BT if you really want lifesteal. Otherwise you should be able to keep your health up with FoN, which is a good item for Irelia.

AD wise i think youmuu is the best item for irelia , i rly dont like carry items for her .
stark is good but you rarely have enought slot for it , you need to have at least 2 defensive items + trinity + boots + 1 dps item :/
i was using wriggle before but the issue is that its an early game item and in early game you dont need life steal you have hiten style
i personaly try a new build , philo stone if life regen is needed if not just faerie charm , boots , sheen , aegis , bruta .
give you amazing dmg early game and aegis give both team utility and defensive stats for early game
later in game u go trinity youmuu and for defensive items i like guardian + spirit visage
if not much cc you pick ionian boots rising your cdr to 40% :)
Anyway irelia is the hardest champ to build in game in my opinion , you got much way to build her (ok less than at release ... but still more than most of champs) and so much good and useful items for her , its the champ you need the most a rare but very precious quality in this game : adaptibility

Guardian Angel
As mentioned before though, after your Trinity you can pretty much build whatever bulk you want, but please, for the love of god, don't build Berzerker's Greaves on Irelia.
