Kayn isn't really that much of a threat to you, he's more of a threat to your ganks, since he can go through walls, he can easily countergank you and kill your laners. But, since you can see that he's coming, try to use your R, so you can surprise him and slow him.
Shaco
He's pretty annoying with his W, try to not solo-fight him in early game, as he can go invisible with his Q and stop you from attacking back with his W, try to fight him with your allies or ambush him, as he won't be prepared with his W.
Kha'Zix
Better JG wins. (But since you might be playing blind pick, he might be not as good as you, if you're not a beginner, duh)
Trundle
Trundle is only a problem if he's got the lead, he'll probably build HP and armor/MR, and if he does have the lead, it'll make him hard to kill. If he's fed a lot, then I'd suggest dueling him, and mostly fighting against him with your teammates. But the good thing is, that trundle isn't that used for jungle.
Evelynn
Evelynn isn't that bad, the only thing you have to do is to not get left behind. And the good thing is that most Evelynn players aren't that aggressive and will avoid 1v1s in the jungle most of the times in early game. In mid-game, all you have to do is avoid getting hit by her while her W or E is active, I forgot which ability was the one that charms you, just avoid being charmed by her, and you should win, normally she used her R for running away or when you're both low in a duel, so if she has her R, try to get her low first.
Vi
Avoid fighting her alone in both early and late game, as she can easily outdamage you, and is both a tank, try to fight her with your allies, and also try to avoid her R, try to convince some of your allies to tank her while you're doing the damage.
Karthus
Not really a problem, only thing is that if you're low, he can kill you with his R.
Lee Sin
Lee Sin may be a popular counter to Kha'Zix, but in my opinion, he isn't that hard to be killed, because you can easily outdamage him if he's alone, but I'd suggest to avoid fighting him if you're below 75% health.
Rengar
Big no-no, he can easily kill you while being alone. The only way to beat him is by taking the lead by farming and being fed, but if he gets fed, then it won't be easy to kill him, at all. I normally won't approach him unless he's low or if he's way outleveled.
Fiddlesticks
Kind of hard to kill, just make sure to avoid his R or Q, but if he gets you with his R, try to E away from him and hit him with W, after his R ends, try to kill him and pray that he doesn't have his Q, since it can turn the tables.
Ashe
It's pretty good when you have a long-ranged champion to help you, like ashe, as she's normally on bot, she can help you a lot with drake, and also can finish off the enemies.
Blitzcrank
Your prey is running away? Catch it from far away with the new BLITZCRANJK. Yeah, pretty good to have a Blitzcrank with you when going in teamfights, since some of the enemy champions can run away while you're fighting the others.
