I find the best way to play ryze is defensive early-mid game and late game if necessary. When you start i dont engage other opponent unless im close to the turret. One of the most important things to do is to SPAM ABILITIES ON CREEPS after purchasing the tear to build stacks asap!!! If you know your jungler this will be much easier because you are going to steal the wraiths and wolfs constantly to be more defensive but build stacks just as easily. Finally, when you run out of mana, tell you jungle to farm the creeps while you teleport back.
