If you dodge her ult with your Tumble then you will beat her, try to fight Ashe when her passive in down.
Caitlyn
Her poke will win 9 times out of 10 but if you have an all in support (like Braum / Leona) then you could win once you hit 6. Don't get greedy on the minions (if she looks like she can attack you then don't take the minion), be patient and wait until you have the advantage, if she goes into a bush to buff her passive then Condemn her into the wall (if she does this often then max E!)
Corki
Unfortunately Corki's level 6 is just as strong as vaynes level 6 so you will need to Max your q first (for the CDR) and attempt to dodge his Phosphorous Bombs. Try to go in on him once his Q is on cooldown OR he is out of rockets (ult)
Draven
Much harder hitter then yourself, try to condemn him out of his Axes landing areas and dodge his E / Ult with your Q. His early game poke is very strong so be careful until 6 (unless your support gives you increased damage like Nami or Janna
Ezreal
You will out-scale Ezreal, simple max your Q first and dodge his Q/Ult to beat him in fights. Stay behind minions in lane and poke him with AA+Q(AA)+E
Graves
Potential threat, if you are able to dodge his Q/Ult combo then you will beat him, otherwise he will kill you very quickly.
Jinx
High range in the early game and a strong snare, try to get close to her and dodge her W whenever possible. In the late game you can win if you play it well. I don't recommend attempting to fight her at any point in the game however unless you can stun her with your E
Lucian
One of Vayne's easiest match-ups, your Q counters his Q and your E stops his Ultimate, You will win a fight against him the majority of the time. In lane try to play it safe since he could still out-trade you with his passive.
Miss Fortune
In lane she will out-trade you (even solo 1v1). This is because of her W countering your W and her Q rivals your Q. Try to Condemn her the moment she ults and Q out of her E, with appropriate brush and Tumble usable you will win against her.
Quinn
High potential burst, her blind needs to be dodged or she will win the fight. She has bad range just like yourself so you will be able to poke her in lane safely (watch out for her E though).
Sivir
Vayne's easiest match-up. All Sivir can do is E to block your E, other then that you will do lots more damage. Bait out her Q in lane and dodge it with your own, she will run out of mana soon enough since she needs her E.
Tristana
Late game Tristana rivals late game Vayne, her E allows for massive poke and high threat in lane and end-game, her Q allows her to stack damage which will make her hit harder then you just as fast. In lane you will want to condemn her if she jumps you and if she ults you will want to roll into a position to make you get knocked to safety. Surprise her later in the game and you may be able to kill her before she is able to W away.
Teemo
Memorize Teemos Q and it's cooldown, in lane you will know if he is maxing it based on it's damage, this will give you it's cooldown in time to engage on him and potentially kill him. Don't fight him if his Q is on off cooldown. Late game you should be able to beat him buy staying in stealth (Ult+q) the moment he blinds you and re-engaging once the blind has faded.
Twitch
His ult can be a treat if you don't get close to him before he uses it (it's range far surpasses your own), dodge his W with your Q and you should be able to out-trade him otherwise he will surely out-trade you.
Varus
Get in range of him and dodge him E/Q's, If he lands his ult then he will be able to attack you from range and take no damage so you will need to dodge it. In lane try to avoid his Q's / E's and you will be golden, mid-game he will be scary so I suggest only attacking him when your flash is active (to dodge the Ult). In the late game you should be on par with each other and skill will determine the winner.
I recommend following a lot of what this guide mentions (with the exception of build, runes, masteries and skill leveling). All the tips and tricks should be acknowledged.
