This is on purpose, to allow people that don't like the chapters feature to use the old display, where there is no table of contents and you can make your own if you want. It's also for backwards compatibility with old guides. There should be a note in the builder explaining this functionality too.

I just noticed something else though, I changed the name of my build (in progress) to a different name. The link in my profile hasn't updated the name but when I click on it and view it the correct name is there. Any idea why this is happening?

The system detects the correct URL based on the number at the end, which is the ID of your build. So if you go to /lol/build/sadfasdfasfsdfsafds-1234 it will redirect to the correct link for build 1234. The wrong name showing on your profile is just a caching issue, give it some time to reset. To keep server costs down and also keep the page loads quick, there is a lot of heavy caching of content on the back-end. I'm working on improvements to this system but in the mean time, sometimes different sections of the site will be out of sync due to cached data.
Is this an unpublished build? You have two published builds and the names match up for those. If it's an unpublished build, the reason for that is the way the revision system works. When you finally go to publish your build, the correct name will show everywhere. While it is unpublished, you can rely on the information you see when you actually view your build (while logged in), as that is the information in the revision that will get published.
When you FIRST save your guide, it creates a dummy entry in the guides database as a placeholder with the information at the time you first clicked save. From then on all your edits go into the revision database, until you publish. The list on your profile is based on the guides database, not the revisions database, so it's showing the name you used when you first clicked save.
