Type the champs name in the search bar at the top and it will show you everything from starting stats to ratios to recommended builds. Usually if I'm playing Nasus or something tanky I'll look at the team comp and see if there is anybody on the team that I'm not sure about and quickly find them. Then they are easy to build against. xD
Also, you can usually just hit tab and check what they're building. That's probably the most important part anyways. It doesn't do you any good to build up MR for a Nidalee that built AD.

one of the ways to tell is looking at there early game item buy... if they get something like a blue sappier or a catalysis/ rod of ages there AP or building AP/magic. Well if they get a dorians blade or dagger/ zeal there going AD/ Physical damage. That just my trick and you well learn what all the champs are in time.

Just look what items he has. If he has lots of AP items. He prob does a lot of Magical damage.
Now you have some exceptions like Poppy and Warwick. Just a matter of expierencing it, and read the hero information (http://www.mobafire.com/league-of-legends/champions). This heroes don't need AP items because they deal a % of the target health / Current health / missing health. When you die you see mostly a recap of how you died. From that you can also obtain a lot of information.
