Depends which champion you're playing, but in general let a tanky man initiate and keep your AD and AP champions alive and at the back of the team while targeting their AD and AP.
Totally depend on your role. So tell us what champions do you usually play and we shall assists you what you should do in team fights.

Like Luther said. You would be way better off if you start building GP tank(y) and be the initiator. You'll be much more useful during team fights. Mercury's, Warmog, Atmos and then some situational items and that's it. Hes a good initiator because of his W(cleanse + heal).

If you want to go full AD though, you'd have to wait for your tanks to pin them down, then come in from the side and take out their squishy, then run for your life. That's the only way Gangplank would ever be useful in teamfights as full AD/DPS.
Hint: He would most likely die from a good team anyway, because they know how to lash out CC.
