okay i'll tell you everything i do with cho and morde top (i main top so yeah i think i am reliable enough)

morde:
-i always start with a rejuvenation bead, 5x pots and a ward. don't place a ward right away. place it at around or after the third wave (usually when the just before ganker ganks top)

-take siphon first and max it first, take 2 points of your W for defense in the lane and max your first second. always take ulti when available.

-the item i always take at the first back is the hextech revolver for added sustain in the lane and later upgraded into either WOTA or the gunblade. i do prefer the WOTA as it has more ap and also teammates would benefit from it.

-rush the void staff as much as possible as your ultimate deals %health and having that extra mpen would be great.

-i usually get the liandry's + Rylai combo when i got top with mord as it both gives sustain and damage plus both the % burn and a slow. morde has no CC btw so the slow would be a nifty addition.

-after these just itemize according to need. also you can upgrade the rejuv bead into warmogs if you really really really need the extra hp.

Cho:
-i usually take 2 mana pendant thingy (the mana regen version of bead) and 3 pots. i do take wards on the second back so i try to play as safe as possible while still getting farm and harassing.

-on the first back i take a chalice of harmony and if i can a sapphire crystal to turn into the catalyst into a ROA.

-if your jungler can steal blue buff from the enemy successfully you can ask mid lane to give you the buff. if this happens try to max Q then W first as you would not have any mana problems early on but if the stated situation is not available try maxing Q first, get a point in W and max E second.

-use your ulti as a last hit tool to enemy or if you can just eat a minion when you are going low. spam this as this have a small cool down.

-try getting health and resistance afterwards. getting randuins, sunfire and frozen heart would be great.

-if you are not having any problems and you think the match would last long try to get 2 ROA.

-also you can upgrade the chalice into athenes if you want for that great passive.

How new are you? Cho'gath doesn't really have a place in the current bot lane meta once you reach the point where a meta really exists.
