I just have 2 questions:
1. Can I build Haunting Guise after Gunblade (b4 Zhonya's) ?
2. I've seen pp build 2x Long Sword -> Revolver on Katarina, can I do that on Akali?
1. Haunting guise as an item isn't cost-inefficient, so to speak (for 1500g, 25 ap is only 5 more than amplifying tome, 200 health is only 50 more than ruby crystal, so you're basically paying 665 gold for 5 ap, 50 health, and 15 magic pen). To calculate the efficiency of magic pen, we can use this: http://leagueoflegends.wikia.com/wiki/Gold_efficiency and base it off of sorc boots. Since sorc boots value magic pen at around 37.5 gold per 1 magic pen, 10 magic pen is 375 gold. This leaves us with 290 gold for 50 health and 5 AP, which isn't terrible, so to speak. However, once we factor in haunting guise delaying hourglass by 1500 gold and potentially causing a death and a lost fight, it becomes a much less appealing item before hourglass. Basically, it's up to you but I personally prefer hourglass first.
2. Yeah 2 long swords actually gives you a better early game than revolver on Akali than 2 amp tomes (and costs less!). So, if you want to, you can definitely opt for this build instead of revolver rush. However, in my experience, most of Akali's poke in lane comes from constant q harass and since q doesn't have ad scaling, I personally prefer the ap.
Just one more question: in this vid https://m.youtube.com/watch?v=W9ie0IsUZUY Professor Akali skips the Zhonya's Is there any specific reasoning for that or is it just his personal preference ?
I just clicked through the video but it seems like he snowballed in lane with tabi, meaning he probably didn't feel the need to build the extra armor from hourglass (especially since it seems like the major AD threats on the enemy team were mostly shut down) Not really sure why he decided to skip it entirely but it probably had something to do with the different setup he was testing that game (exh + ign).
