In this match up I want to bait a lot, be in his limit of reach for Q + E. If you it an E in that rang you can mka e him waste is Q with some movement, but still damage the soul.
Post 6 you want to have placed several tentacle behind you for his ult. Generally if you survive his ult you kill him easily.

But Level 11 is enough, she just need to charge the passiv on the wave before Poke/Fight.
Illaoi have a bad match up against range champ, mostly against attack speed champ.
But the Kayle player need a good spacing too ;)

Stridebreaker is actually very bad on Illaoi, the attack speed don't help a lot and if you want more slow take Iceborn Gauntlet.
Probably playable but become useless over time.
Is there a scenario where there can be a 4th Mythic option, being Heartsteel, and if so, is it more viable to go all damage at this point after Heartsteel or all tank?
You can't push a lot early game.
I see a lot of streamer who try this item and the winrate in not insane (45% in Diamant+).
Playayble Item of course, with a black cleaver to deal something ^^
Personnaly I play really safe the first 3 level, and I make slow push again and again to deny a lot of minion and win the lane like that.
You can look for a kill when you crash, you can dive with your jungler.
I agree with you, Iceborn Gauntlet is better in mid/late game, and can help your mate in teamfight better than Divin Sunderer against Cho'gath.
I like to play with Divin because it helps to kill my opponent and then delay the point when I couldn't kill him anymore.
I prefere choose my Mythic depends on the team composition, and I convinced that each item has its utility.

Killing the spirit made with the E is very important: if you think you have enought damage to kill the spirit in your match up, max E to gain more echo damage and reduce the cooldown.
If you play against Tank or Bruiser, max Q is better, you gain waveclear and damage. I personally recommend this, all Champion are currently too Tanki.
Sadly we have a bad level 1 against Kayle (Lethal Tempo), we have a short window to take advantage before the level 6. After 6 you need to poke before all-in.
Mid game it's difficult to pressure, the wave clear she have is insane.
Winnable but difficult.
my table is simplified, actually both teams compositions can influence your choice.
In some cases I play Grasp because I need the permanent hp in late game to resist enemy carry for exemple.
In some case I play Conqueror for extra damage because I think because I think the fights will be long.
It works by feeling, the Item i need to play can influence my desicion too. I play Grasp vs Nasus because i like to play Sheen.
