If you can afford like only 20$ more, HD 7850 starts at 240$ and beats both HD 6870, GTX 560 and GTX 560 Ti, while barely losing against GTX 570. I mean you'll get quite better results for 20$ more. Maybe invest less in some other component and then you'll have enough for this card. HD 6870 is good, because its cheaper. If you're going to buy a HD 6870 for 220$, then go for GTX 560 Ti, because it beats it by few frames and also like you said, you like nVidia more.

I'm running 1920x1200 with 1GB memory just fine (even with and older card like HD4870).
You really should save yourself those 50 bucks. The extra memory won't make a difference.

The cooling seems good, but do google it to make sure you get a good cooler. (don't spend any more than 170USD on the card in any case)

Yeah HD 6870 can run almost all new games on high or even maximum(exceptions like Crysis 2 and Metro 2033) on 1920x1080 with atleast 30 FPS. You will be able to play new games for the few years, just probably not on high settings. Your intentions are to buy one good gaming rig and then have it for few years. Because of that, I would suggest you add extra 20$ to the HD 6870 you suggested, and buy HD 7850. Why is HD 7850 better? It's a new series, it's overall better when it comes to strength, it consumes even less power than HD 6850 and its 2 GB too, if that matters to you, even if it shows minimal improvements at this resolution. Also, at higher resolutions like 1920x1080, it beats GTX 560 Ti, which is in same price area.

Better price/performance. (7850 has 20% better performance, but also costs 50% more)
Why 7850?
Draws less power.
Runs cooler.
Note: I think 7850 overclocks a little better than 6870, but it's also hardcapped in the BIOS, so you won't reach those levels without a special card or by making a BIOS flash yourself.

Anything below equal to or below 1920*1200 doesn't really need more than 1GB.
That card is kinda pricy for a minimal boost to performance. The 2GB HD6870 is still better than the GTX560, but I'd say you're probably best getting the 1GB 6870 since only those with really big resolutions will notice the difference.
