Reading this got me very confused lol. Somewhere in the pile of comments when you said chips, I thought of my version of chips and I'm puzzled. Never heard of crisps, I believe crisps are chips. :3
I think you view the world of chips/fries as too black-and-white. Depending on where you go, they can be all sorts of different sizes. Fries from Wendy's are quite a bit thicker than fries from McDonalds.
Would you only classify "fries" as the greasy, skinny oily kind then? With chips being thicker, fluffier potatoey ones?
Fries are like... thin chips. You can buy things like Southern Fries, which are very thin.
Chips are luxury chunky chips. (Chips are better) Another point, you don't tend to add flavour to fries (such as vinegar) but you do to chips.
