There is no special secret for it.
It just means you need to understand the champion.
That includes that you must know:
* What can I expect from his abilities?
* What can I expect from his build?
* How can I make sure that I counter him, and not otherwise?
What can I expect from his abilities?
Ezreal is mostly skillshots. There is one big pro about that, you can dodge them.
Make sure you are a hard target to hit.
What can I expect from his build?
Ezreal can go AD, AP, Hybrid and even tank. Though he is most likely going AD (which means you need to watch out for auto attacks, mystic shot and the ultimate), you should be aware of the possibility that he will do something else.
With AP Ezreal, expect a lot of damage from his W and ult. Dodging these spells is pretty much GG.
With Hybrid Ez, do not buy defense like MR or Armor, because he does damage both ways. Just make sure you have a strong early game, since hybrid Ez is very lategame dependant.
You probably wont see a tank Ez, so I wont explain it :P
How can I make sure that I counter him, and not otherwise?
If he goes AD, take armor.
If he goes AP, take magic resist.
If he goes hybrid, take health.
If he builds armor and you go AD, get armor penetration.
If he builds MR and you go AP, get magic penetration.
If he builds a lot of HP, build anti health items (Such as blade of the ruined king, and liandra's torment)
Etc.
This pretty much counts for every 1v1 combat.
Just be aware of the enemy actions and you will be fine :D
