Lol.. I actually just did this and had to figure it out :P
1) First off search and find lol.launcher (launcher usually works for the search) and make it a desktop shortcut. Rename it to LoL US
2) Download the EU client off the LoL website. When it asks you where to install it to, install it to C: and name it RiotGames EU.
3) When you install it make a desktop shortcut.
4) Once it's installed rename it to LoL EU.
5) ????
6) Profit.

6) Profit.
1) Make 3 Folders. "US & EU", "US", "EU". These will be for organizational purposes only. Place "US" and "EU" into "US & EU".
2) Go into your AIR folder under Riot Games and take the "LOL" notepad file and place it into the "US" folder.
3) Download the properties from Scrax. It's 2 notepad files. Another "LOL" and another name I forget atm :P
4) When you downloaded the small files, place them into your "EU" folder. Those 2 files will go into your "EU" folder when you want to play on US. Vice versa. When you wanna play on EU, place the single file into "US", and pull the two files from "EU" into AIR.
5) It's literally just dragging and dropping :)
