1) Quote is meant more for comments, when you want to quote someone's comment in your own. The editor on the guide is shared with the forums, that's why it's showing up there.
2) Code allows you to paste programming code and have it formatted a little nicer.
3) I suggest you read the bbcode guide and some other related topics in the stickied FAQ thread :) It should help you figure out how to do all that. In particular, you want to look at the wiki links and icon tag.

There are two methods to add icons with tooltips to your guides and comments. The first method shows just the icon without text and can be of any size. The second method shows the icon and full name but cannot be resized. Both will get tooltips with all the details, as well as links directly to their database page on the site.
Here are some examples of the first kind. The code is on the right, and the image output is on the left. Replace round brackets with square brackets in your actual post to make it work. If you do not specify a size, it will default to 16 pixels, which is approximately the height of regular text.
