I'm no expert, but just gonna throw out some champs that can be played mid/top/jungle. Some will be ones I just like that may be considered OP and some will be ones that aren't played as often but that I find different.
Mid Laners
Xerath - you mentioned him, and I liked using him. Has insane range, but can be hard to use at times because he is slow and a bit clunky. That's why he has such great range though.
Orianna - used her a few times and I like her. You really have to learn to use her though. She might also be able to double as a support.
Twisted Fate - I enjoy him, plus you can also go AD if you need him to.
Akali/Katarina/Kha'Zix/Pantheon - Assassin's that I like, but can be OP. Once you get snowballing, they can be ridiculous. Can all also be used Top Lane.
Cassiopia - a counter to melee mids. I like her, just not that great with her.
Malzahar - I like him and he isn't played a lot. He focuses more 1v1 with his ult.
A couple that are different but aren't used a ton: Heimerdinger and Leblanc
Top Laners
Zed - Another Assassin. He is tough to learn but I enjoy him. He can also jungle.
Irelia/Fiora - Both take some farming and need some kills, then they can snowball and destroy.
Renekton/Elise/Singed/Shen/Olaf - They can all be tanky or be Bruisers(more AP in Elise's case and troll with Singed). Often considered OP, but all champs I enjoy. I was playing a lot of Elise, but I recently started playing Renekton and I might be hooked.
Nidalee - So much fun whether going AD and mauling in Cougar form or AP and throwing spears.
Mordekaiser/Gangplank/Wukong/Swain - Can all do top or mid. Only one I have used much is Wukong. Can all be fun to play, but the most meh is probably Swain.
Going by what you had posted, I would pick from the following.
Mid - Xerath, Akali, Cass, Mal
Top - Fiora, Renekton, Nidalee, Wukong
Again, I'm no expert and this is just IMHO. However, I think you would have fun with these champs while at the same time having a mix of uncommon champs with carry/snowball potential.

Mid: Sion - awesome mobility, great ganks, push lane mid and roam, versatile, owns hard if you know how to play him, decent early and mid, late falls off but still a threat. Dat burst. Hes green. Good CC, Lifesteal build? trolol.
Top/Mid: Poppy - no need for reasoning, little hulk i like to call her. Heavy sustain in lane, ungankable after 6, insane damage output and survivability late/mid/early. One of the most feared carries late game, you say fed ap/ad carry on their team? I say np. Very versatile, build tanky, ap, mobile, support, ad. Just as long as you get sheen, its all good.

Since when did Poppy have heavy sustain in lane? Passive is great, but still gonna get harassed easily early by most champs.
Uhh, i play poppy vs vlad, jayce and other harass champs, and i sustain really well...
so if that isn't sustain, i dunno what is.

Well, as some of you know, I'm still a fairly new player who only recently started playing ranked. I placed into Silver I and have been chilling there, haven't been able to climb, but nbd. Personally, I think my placement was a bit too high for my actual skill level - I got some pretty great teams in placements, and I only played Rumble, Vi, Hecarim, and Taric - who the general consensus says are pretty OP, and I agree. Well, already I'm running into the problem I run into with most games - well, boredom.
So, like some others before me I guess, I'm looking to go the route of 'only playing one champion' and see where it takes me. I may or may not take it to ranked, and of course I'll play other roles/champs when I need to if I take it to ranked. But ya know, I just like the idea of taking that one champ and making him/her mine. I'm just going to list a few points here of stuff I would like in a champ or stuff I have thought about when trying to come up with a champ. I'm fully aware no champ will hit EVERYTHING I'm looking for, but ya know, let's see what people come up with! I really appreciate all suggestions.
- I'm not too locked in to any particular role. I am probably best at playing junglers, but maybe trying something outside the jungle for my one champ would be especially fun. Mid has always intrigued me the most, but I don't seem to do as well there. A bit skeptical about picking an ADC or support as my "one champ", given your reliance on your lane partner.
- At first I thought I had to choose a champ that could fill at least 2, but more likely 3 different roles on a team. But I've reconsidered this. Especially if I just play normals, I can just dodge and wait til I get to play my champ in the lane I want. Versatility is nice, but in no way required.
- Don't really want a FotM champ. I've had my fun recently with
- Of course looking for that ever-elusive overlooked, underrated champion hah. But I don't mind if the champ is not considered SUPER strong at the moment, he/she can be considered a bit UP. On the other hand, my first idea was to play
- Speaking of Xerath and Lux, those long range bursty AP champs seemed really fun to me, but for whatever reason, I just don't position well enough at the moment to play them. MAybe from playing so many melee champs for so long, I just find myself in the middle of fights way too much.
- Prefer a champ that has a little snowball/carry potential, and that doesn't fall off late game TOO hard. Nothing worse than that feeling of winning lane, having a really good score, and then realizing "oh, they are still outscaling me hard".
- Preferably not one of the champs that are close to perm-banned, in case I ever take it ranked!
- Originality! I'm up for any ideas! remember, the idea is to make the game fun for me again, so don't be shy about shouting something out. Who would YOU try to really master if you could? Or who would be fun to see more played?
