Had a lot of fun with this in one game (15/7/20) but I wonder how well it would work if you are not fed.

Sooo, the guide is well designed and not really that bad, but there are some critical flaws that hinder it from being actually useful.

First of all, Enchantment: Devourer is nice on Vi once sated, but it's by FAR not a must-buy. Seriously, if you're behind, you'll be even ****pier. If you're behind you should get either cinderhulk or warrior (afaik warrior is the best one).

Then again, getting 2 damage items after you did a damage upgrade on your jungle item lets you being a squishy for nearly all of the game. Even if you account for the ****py HP from triforce, you can't soak enough damage to survive an even fight. If you're behind this would make you be even worse off.

You'll always need one full tanky item after a damage enchantment on Vi unless you're REALLY fed. The end of game build isn't actually that bad ( Black Cleaver is often picked on her, but triforce isn't too bad if you're going for solo kills), what makes it impractical is the buy order and the feast or famine nature of doing damage items after buying devourer on top of Vi's feast or famine kit.

Personally I would do warrior/devourer + 1 damage item into full tank build, but it's your guide, so going for a more assassin pattern isn't bad per se. I would still recommend at least one defense item before your second damage item, and maybe leaving the assassination altogether for a more tanky build if early game goes wrong.

I play Vi a lot in the jungle too, however with devourer I only see that it is useful if your team gets ahead and you already have a tank (e.g top lane). However saying that it is quite viable since there is the Rift Herald that you can get for stacks. Devourer is really fun once you get a few items as well. Also, you said Skirmishing Sabre doesn't work well with Vi at all? I am sorry but I have to disagree with this, since Vi is always deep into fights (melee champion) she would work really well with this red smite reducing dmg taken by 20%! You could smite the adc and focus someone else. It works perfectly in my opinion. Also for your tank item section, would you consider buying Steraks Gage? It soaks up a lot of damage in teamfights. But yeah, good guide just wanted to say the above.
