So in my experiment with the Sorcery build I did almost 12k more dmg to Garen, and the comet and scorch combo alone did over 2.2k dmg more than the grasp + shield bash combo. The grasp build gave me almost 200 hp more health but does it matter much when you have over 4.4k health?

No I don't consider Doran's shield being an answer in any cases. To be honest, recently I started to try running Corrupting potion instead of Doran's ring and it is pretty good as well (not sure if exactly better). It's more about playstyle against both Teemo or Veigar. You will have to play it safe and farm early on and sometimes you have to give up some cs, that's life. Malphite is situational pick, he shouldn't be considered as something that you should play in any case.
If you want to try different path for starting items - try Corrupting potion into Dark Seal and Sapphire Crystal on first shop. Or at least Dark Seal.
About all-in I usually go like R -> W -> AA -> Q -> AA -> E -> AA. You can probably swap E and Q order, but I like to have my target pinned down, in case that it decides to flash away or something (to keep my speed-up).
And yes, Iceborn Gauntlet waveclear is pretty important if you want to shove lane really fast and it should be more than enough to waveclear without maxing E. In some cases you don't really rush gauntlet - like against AP matchups. But there you are usually in pretty bad spot and you don't really want to push - just poke with Q and play it safe. Generally I never lacked ability to push wave fast when having Gauntlet, because the more armor you have, the bigger AoE is and later on you are going to have really huge splash there, so generally you are going to be able to shove wave of any size really fast.
