You use a video capture program like FRAPS. Turn it on in the background, play your game, then use a video editing software to add music, transitions, etc.

And if you mean games in general:

For PC, do as Blze001 said, FRAPS costs money tho, but there is a lot of free video capture programs as well I think. I Wegame is free if I am correct.

For console: Some games, as halo, supports to download matches in some way...
But for others, you'll need to buy something that connects your console and the computer. <-- Not 100% sure if this is correct. xD

For LoL only there is its own capturing porgram LoLReplay, isnt there?

Yes, but it does not record the match in a way FRAPS does, it allows you to re-watch the match from a free camera perspective, you still need a recording software like FRAPS to record what you want.

On the plus side for LoLReplay, you don't have that many FPS drops from recording. But nothing will be live, so yeah, choose your poison.
