Use the ones that you like. If you're new to the game read up on what each champion does first. All of the guides (especially the more detailed ones) are perfectly viable builds. You could always figure out the way you like to play a champ, yourself.

Generally you'll want to use the highest rated guides, although if you're not comfortable with the playstyle that it entails, good guides are typically found within the 70% and above approval rating. Great guides are 80% or above.
For example, say you want to find a guide for Jungling Amumu, but the top rated guide is a laning one. I believe the third or fourth placed guide on that page is a jungling guide, so you can check that out. However, you can still implement ideas and items from the first guide.
This also applies to hybrid champions that can go either AD or AP, Tank or DPS, etc.
If you're new to a champion, longer articles help a lot more than very brief, high-rated ones.
Obviously I'm not saying that you should confine yourself only to guides that place highly, but those guides generally deserve their ranking.

Again: if you're new to the game just use the highest rated, whatever. It really doesn't matter but if you're a veteran you should pick apart each build you come by and elaborate on the framework given. If you're just saying "I want to play ranked" it doesn't give too much information.

It's also notable that the majority of people who play LoL aren't level 30 pros who sweep ranked matches. The majority are probably in the level 15-25 range and +1 builds that they like or have done well the first time they use them. If you want builds good for ranked matches, like B-Wong said, you really have to look at a lot of them and most importantly, playtest them.

I think that you should do some research on champs that you like peronsally. When I research, I mean reading guides on here, watching youtube vids, etc. There are so many champs that are viable for ranked games, and some are better on TT, or SR, and some are great for both.
But before you jump into ranked games, you have to be sure that you are ready for them. Ranked games are meant to bring you to the next level of play. Be it solo 5s or premade 3s pr 5s. You have to be ready for it. There is usually more communication in ranked games, so you must be a team player.
Find a champ that works for you, research them untill you feel that you know them inside and out, what items synergize with their skills and passive, and what to do in situtational games.

Jebus you have to realize that those mobile champs need to time things right though. One mis-click, or clicking too soon or late can spell disaster
