Yeah what has been said. Max E first and that's all the damage you'll need in that phase, so you should focus on countering for runes. Also I prefer to start with Cloth Armor and 5 pots. And I always take Ghost since Olaf is a slow son of a *****.

For me:
I max E first, with one Q and a few in W so that I can get health back if I'm getting harassed hard. Generally Olaf can trade harass with anyone and come out ahead because his E just hits so freaking hard.
If you are getting pushed around, you can always use your Q for some ranged last hits.
I go deep into the defense tree because honestly I find it more beneficial for solo lane play. The extra damage from the offensive tree won't let you stay in lane as long or be as obnoxious later on in teamfights.
