If you want to play mid a bit safely with some power behind it, I would choose Zyra or Ziggs. They both can stay back closer to the tower while throwing out some AP-charged abilities. Another champion to consider is Heimerdinger. Like Zyra, he has turrets, but his playstyle puts a little more focus on them.

I agree with all the champions listed here by Phil15 except for Kassadin. Kassadin can get shut down pretty easily. They're all very team compatible so you should experience with these few.
Some mid champions that I find are quite difficult to HARD counter are Gragas and Swain, so maybe you should experiment with them as well!
