Why eagles REALLY didn't fly them to mt. Doom:
Eagles didn't have soul because Iluvatar didn't give them one. They were only given life and as the master race of animals they thought that they were basically gods after Iluvatar. They helped Gandalf only because he had helped their king, Gwaihir.
Eagles didn't fly Gandalf and Frodo and the Ring to the mount Doom because they thought that Sauron was no match for them and because they didn't see him as a threat and because they didn't feel like the whole ring-Sauron-Mr. Frodo thing had anything to do with them

I saw "plot hole exposed" and thought this was going to be a My Little Pony porn thread. And to think there was a glimmer of hope for MOBAfail

firstly, this is a mission of stealth. giant birds are not stealth, or they would have to fly at a height that would be unreasonable for a rider.
second, the reason their had to be a rider was that they couldn't just drop it in the volcano, it had to be taken to the crack of doom itself, through the tunnel, which means the eagle would have to land outside which is extremely noticable.
third, eagle gets shot and falls, killing it, the rider, and losing the ring.
fourth, the eagles are not just dumb animals and this would be asking them to bear the ring as well, to carry the rider with the ring.
in conclusionn, they had to plan for the very worst of every situation and outcome possible, they had no idea what would be on the other side of the mountains, the idea was to be sneaky not quick.
