As Rhaast, if Amumu builds tank you are going to have an amazing time. Because you heal off of max health damage, you can just attack Amumu and never die.
With Shadow Assassin, Amumu is more of a threat because he can CC and you won't be able to get away. Their team will just focus you down and there isn't much you can do.
Dr. Mundo
Mundo is an amazing match-up for Rhaast, as he just heals and heals and heals. Rhaast never dies.
Still a minor threat to Shadow Assassin because Mundo is a magic resist tank, not physical. This means you can still chunk him down pretty hard, ult, and then repeat and he is dead.
Ekko
For both Rhaast and Shadow Assassin he can be a threat. He isn't tanky, so Rhaast doesn't live forever off of him. He also is just as slippery as SA, and his R makes him extremely hard to burst down.
Elise
Rhaast can't heal off of her and she will shut down Kayn early game. SA can't kill her because of her damage, CC, and E in spider form.
Evelynn
SA deletes her. She is weaker than you are early, so you can farm and gank freely without much worry. She scales super hard. but she can't kill Rhaast because he is so tanky, and SA can't be caught by her. She does have her ultimate for escape though.
Fiddlesticks
He is hard to kill as Rhaast as he heals almost as much as you. As SA, he just fears you and walks away. Plus, he rushes hourglass, so he can be hard to kill.
Gragas
Rhaast can heal off of him forever. SA has more trouble because Gragas has soo much CC and sustain.
Graves
Like Elise, he shuts down Kayn and prevents him from getting his form. His E also stacks armour, and both Rhaast and SA do mostly physical damage.
Hecarim
It just depends on how you play it. If you can bait out his E, then he has not real damage afterwards.
Ivern
You can easily beat him at all stages of the game. As SA, his shield cannot save whoever you targeted, and as Rhaast he just doesn't do enough damage.
Jarvan IV
Early-game jungler. Will try to shut you down but you outscale him hard.
Jax
Doesn't outscale you and he only has CC in his E. Better against things like Master Yi.
Karthus
He does outscale you, but you get your powerspike earlier. Once this happens, you need to be invading him and trying to prevent his farming.
Kayn
Here I will tell you how to beat Kayn if you go up against him. First, early-game junglers are amazing because Kayn is trying to gank and get his form. Look at his runes at the start of the game. Conqueror means Rhaast, and Dark Harvest means SA. If he is going Rhaast, he will be ganking your melee lanes the most, so watch those. If he is going SA, then he will be ganking your ranged lanes the most, especially bot lane. Play around this knowledge and try to shut down his early game because if he can't get his form quickly, he falls off hard.
Kha'Zix
Better than you early game, so be careful. SA can out DPS his later, but Rhaast does have to watch you as Kha'Zix can kill you if you are alone.
Kindred
Early-game jungler but very predictable. She will try to invade so she can get her marks, so you know where she will be. As SA, her ult counters your burst.
Lee Sin
You outscale him and he doesn't have any way of locking you down.
Lillia
Late game monster with her team-wide sleep. Fine fore Rhaast but deadly for SA.
Master Yi
Yes, he can dodge your stuff, but he just doesn't have enough damage to kill you quickly.
Nidalee
She is strong early and scales well into the mid game. She will be able to bully you and is hard to pin down because she can kite you out.
Nocturne
Similar to Evelynn, but he has no escape. He is weak early and if he ults you, you out DPS him in both forms.
Nunu & Willump
Very strong because he deals a lot of damage, has CC, sustain, and he can be very tanky. Even Rhaast has trouble taking him down.
Olaf
Super strong early game and the more you damage him the stronger he can get. His ult also makes it so you can't slow him and run away. He falls off late game though.
Rammus
Very tanky and deals a lot of damage. Rhaast can kill him but SA has a lot of trouble.
Rek'Sai
Strong early game, very mobile, has sustain, and has great tower dives. However, Kayn outscales them and neither form has trouble.
Rengar
Scales much more than you and is a huge problem However, if you can stop him from getting kills, he doesn't do as much damage.
Sejuani
Super tanky and all of her abilities are CC. Easier for Rhaast because he can heal, but SA has a lot of trouble because she can lot him down and she has a lot of resistances.
Sett
Not much of a jungler anymore, but he is strong early game will a lot of damage.
Shen
Very strong right now because of his amazing ult, damage, and overall strength.
Skarner
Lots of CC and the ability to chase. If you try to engage, he can R you can kill you quickly.
Sylas
Don't jungle with this champion.
Taliyah
Doesn't have enough damage to threaten either of you.
Trundle
Trundle is a tank buster, so he may give Rhaast trouble. Doesn't have any hard CC though, and he is slow.
Udyr
Very strong right now due to his buffs. Has everything. Damage, CC, chase, and sustain.
Vi
Has CC, but you outscale her and she isn't a real threat.
Volibear
Tanky with lots of sustain, great tower dives, and CC.
Warwick
He can outheal you, but you outscale him and deal more damage.
Xin Zhao
Strong early game but very straightforward and is easy to predict.
Zac
Weak early and Rhaast destroys him. SA can dodge all of his CC easily and then kill him.
Maokai
Any champions with CC and that are strong early because they allow Kayn for farm safely and get his form early.

The main goal of Kayn is to farm and gank. You want to focus on ganking either melee enemy champions for to get Rhaast, and gank ranged enemy champions to get Shadow Assassin.
