Here is a build to dominate in lane with Olaf. Depend or your team, you can be top or bot. This build is an Off tank build very useful in 3v3, in 5v5 i recommend Olaf as a jungler or a tank.

For Marks, i take Critical Chance for early game. A early game crit is very good to deal a lot of damage. I take armor Seals because it make the difference in lane beetween a guys with rune and a guys with no runes. For Glyphs, i take attack speed to help Olaf to be good without his passive. And finaly my Quintessance are Armor Penetration, very useful early game to deal more damage to tank.

Off Tank olaf is the best way to build him, because he can engage team fight and he can deal a lot of damage, not like a tank when engaging deal no damage. I take Frozen Mallet to be able to chase enemies and trow my axe to slow them. I take AtMogs to be very tanky but still a carry. Finish with my Bloodthirster and my Infinity Edge to deal a lot of damage and get some life life steal to be very powerful with the Olaf passive .

Early game, I take Reckless Swing to deall 100 true damage at level 1, it deal a lot of damage in early gsnk bot. I max Reckless Swing to deal a lo of damage early and mid game with true damage. After max Reckless Swing, i max my Undertow to deal more damage when harassing. After max it, i max Vicious Strike to deal more damage in team fight and more life steal to stay alive when im focus.
