Firstly... I'm sorry for my late reply! Although Jhin is a fun champion I believe Zoe is more mechanically challenging meaning I tend to get more excited when I make a nice play :) Zoe usually does not need Zhonyas unless your enemies find ganking your lane millions of times is fun -_- or you are having a match up against Zed, Fizz and all the annoying match ups. Zoe's skills cant really combine with Zhonyas other than protecting her from taking damage from a ult longer than she needs it to. If you do build Zhonyas when you are stuck in a situation that needs it, I would trade it out for Morellonomicon because even if you are going to be giving up that CDR, AP, and 400 mana it wouldn't make much of a difference in late game. Zoe already has a trash load of CDR from other items and runes, she wont feed on mana around mid game and her damage is covered by the other items and a possible early snowball! If you do feel the needs of keeping your Morellonomicon I would take out Banshees veil (which I wouldnt recommend most or all of the time ;D) Banshees Passive is what stops the one shotting Zoe possibly being the one who gets one shot! But that would mean you would have to play more safely and take bigger risks. If you feel you don't need anymore movement speed you can take off your sorcerors shoes because you already have a ludens. The item you take off varies to your enemy match ups so they dont need to always be the same, play around with different builds until you find something you can relax on. A good Zoe takes time to learn and your first few times may want you to throw your game and abandon the champion, get used to the champion and I hope this extremely long and late reply can let you enjoy your league of legends experience :)
