I'm a jungle main, so most off-meta picks I play(ed) are in the jungle. Obviously I played 
Maokai jungle so much to the point I do not personally consider it off-meta anymore lol.
Some of my other favorites are: Shen jungle, Rumble jungle and Malphite jungle. I also played quite a bit of Pantheon support before it became meta.
But by far the wildest thing I've pulled off was Karma jungle. I actually did well with it and won in both games I played. XD
EDIT: I also absolutely LOVE playing Arcane Comet Kha'Zix (Kha'met) with Void Spike evolution in ARAM.

Off meta... I use anything for sup, even a spoon can be a good sup if used well.
Lately Quinn is quite enjoyable, fair amount of cc and high speed, is good to be everywhere.
