Hard as in u die a lot or.....? One good must try's is Katerina. IMO she is a important milestone for beginners because she,s fairly easy to use and because I suck at meelee ones :D also....know what's yr strength and weaknesses....are you good at skill shots? Do you prefer crowd control abilities? Or champions that can burst the **** out of their enemies? Ya know...you must be daring and experiment with champions .
i maybe new and my knowledge to lol is limited but i will always share my opinion and ask questions so don't judge me ;)

Hi. I can’t say there are champions you “should try” or “must learn”. It depends from your play style and personal preferences. I can only make few suggestion:
Middle lane:
Annie (why: good damage, capable of massive stun and have defense as her shield; drawback: short spell’s range, you’re easy target for gangs without your stun);
Katarina (why: good damage (AOE), escape mechanism and good farmer and ganger; drawback: melee champion and you’re main target in teamfights);
If you like long range APC you may try out
Nidalee or if you’re looking for a challenge try
Orianna (she is really hard to play and can tech you a lot);
Jungle:
Udyr (why: mobile, good damage, sustain and has stun; drawback: don’t have Ult, with gang fully rely on
Blazing Stampede)
Shyvana (why: the fastest jungle clear, good damage, naturally tanky; drawback: no crowd control except Ult, weak gangs).
Top lane:
Renekton (why: escape mechanism, good damage, tanky, don’t have mana)
Tryndamere (why: good damage, escape mechanism, has crowd control (slow), your Ult will save you many times even in hardest teamfight)
Support:
Sona (why: pretty easy to play, has heal, aura and massive stun with her Ult; drawback: riot nerf her regularly, heal is pretty weak);
Leona (why: ton of crowd control, defensive mechanism with
Eclipse; drawback: if you miss your skills the consequences of this can be fatal).
Those suggestions come fully from my personal experience. I did not really understand your term “live play” I think you mean PvP normal games. As for a testing champions – 1-2 games will let you know – does champion suit your play style or not? If you are looking for new champions try to look for some during free week rotation, may be there are few you will be interested in.

I have to say that thresh and syndra wouldn't be that easy though
Agree.

As for me I chose

The first thing you have to do when trying a new champion is to ignore that one bar that says "DIFFICULTY"... Just disregard it entirely because in my experience I have found some of the higher difficulty champions alot easier and some of the more reccommended champions to be quite the handful at the best of times.
Secondly is to not assume greatness right off, alot of people play a champion once, get their ***es handed to them and refuse to play that champion again - Take the time to get a feel of the champion and always play with the assumation that whoever you are playing knows how to counter you.
Thirdly, don't be deterred from trying a champion that is in a role you have struggled in...yes we all have dreaded roles however I do believe in the vast amount of champions in LOL there is 1 champion for each role for each summoner that suits their fighting style so keep trying no matter what.
Finally, Don't be affraid to try something new...thats what is important

I've always found it difficult to try new champs. I main Cait, can play Varus alright, great at Nami but don't really supp anybody else. I can play Irelia pretty well and I've played Kayle and are good at bots but suck in a live game. How can I smoothly transition from champ to champ. I've been playing these ones a lot and i would like to diversify because i'm becoming screwed if im not adc or supp or even top. where should i cut my teeth with new champs, bots? and how long should i play with those champs before i roll them out in live play. Also, are there any champs that are a must learn?
It seems the champs you do best with are ones without skill shots. I would keep with that. Personally, I suck with champs that don't have skill shots. Try finding champs that don't have skill shots in their arsenal
