There are generally two philosophies to itemization in lane.
1. Buy early game items and shut the enemy down enough that they won't be able to beat you later with their better itemization for mid/late.
2. Build for mid/late and farm safely so you can crush late game.
I personally subscribe to #2 myself, but I play mordekaiser.

Tri lane for life.
If I find myself losing my lane, I pull some standard Jayce and take it back by continuing my build like nothing is wrong. I have never gotten more than 2 of any Dorans item, mainly because anymore delays my rule of getting a Tri Force before 23 minutes. I could probably become better if I start varying my itemization, however most games I play it ends before I can claw my way back, or I get overly fed and I don't need to worry about reclaiming my lane.
Jungler ganks help, however, and I always take those opportunities.
