You can always let them look at champions and let them see which ones they like.
Then you can check the difficulty level of that champion and see if they are easy to play.

Of course there are some very easy to play champions in every role:

i started with Amumu and Fiddlesticks cos they both just dive into the enemy team so my job was pretty simple xD. defo recommend Amumu tho - can play a very important role and easy to get the hang of

It depends on your definition of easy. There are champions who have an easy kit to master, but their difficulty lies in other aspects of the game, like positioning or skill order. In the jungle, for insance, Fiddlesticks is a very easy champion to use. His kit alows him extremely healthy clears and very little skill is required to master his clears. His difficulty lies in positioning himself to do a ton of damage while not dying. I highly discourage any new players from trying to play Fiddlesticks before mastering other fundamentals of the game. Champions like Garen, Cho'Gath, and Nunu & Willump are great for new players because they really only need to spam their abilities to function for their team. These champions are not great for teaching you important positioning skills and combos because they don't really have any. Once you learn these skills, any champion is an easy champion to play. Rather than looking for an easy champion, watch the pros and experienced players and see how they position, farm, and combo their abilities. Then you can play any champ you want. Hope this helps :)
