"Building morellonomicon and then building ionian boots of lucidity can be a good choice. I prefer to buy sorcerer's shoes myself but they are both valid options.

On ap carries such as leblanc or viktor for example, when would it be better to build a void staff over a > abyssal scepter?

"What's the point in having AP and Crit together? Without the attack speed you aren't going to be getting as many critical auto attacks off and without any attack damage they won't hurt, and you're dealing less burst damage since the absence of one/two ability power items.
