Urgot matchup can be a tough one, since if he gets a small lead, or if you did the fight poorly, he can easily kill you. However, since he is an immobile champion, you can always just play safe and avoid fighting him altogether. For the Urgot matchup, I can recommend the following:
First, try your best to dodge his ranged attacks, i.e, his Q and his passive. Since he has an execute after lv.6, it is wise to keep your health as high as possible so that you will have a way better chance at fighting him. To do this, the easiest way is to simply stay out of range, move around so he doesn't get an easy target, and you can also lunge into him to start a trade when he tries to Q you.
Secondly, since he has a shield which has a fairly low cooldown, you should be weary about doing small trades with him. You should always try to make sure that your trades are meaningful, lunging into his shield will only lower your health and take damage back. Try to make sure that you have all your spells up before trading, and that he is not too close to turret for you to get any damage off. Otherwise, trading with him once his W is down is also an option.
Thirdly, after lv.6, you should be able to trade and win fights against him pretty easily, given that you start the fight when you are at full health, and that you try your best to proc all the ult vitals. Be careful though as he still has quite the kill pressure on you if you do not manage to proc the vitals and get the healing, as he only needs to reduce your health to a certain threshold for the execute to work. Therefore, you should try to fight him when the minion wave is closer to you to give you ample space to fight.
Your riposte doesn't really matter here, though it would be nice to stun him or block his ult, it is not necessary to win the fight. Also, with his upcoming nerfs coming live right now, I see no reason that Urgot should give Fiora too much trouble. Most Fioras I see that lose to Urgot, it's because they keep trying to trade into his shield, doesn't hit vitals, and take too much damage in return.
I hope this helps you!
