I just play as Jerry (the mouse from Tom and Jerry) and always roll with exhaust and flash. I make sure they never get on my booty. It's really a cat and mouse game. Kinda like being an assassin, but instead of finding opportunities/moments to execute your enemies you dip in and out of situations to help your teammates with phat heals, silences and damage reductions.
I always say, whatever works best for you, roll with that. Forcing someone to play a certain playstyle doesn't work in their favour. It's just what I found myself working the best for me.

How was Mordekaiser's room like, was it messy? Filled with metal band posters and electric guitars? Jokes aside XD Good job on escaping the Death Realm! He should've just went with Morellonomicon.. or Thornmail if your team was heavy on physical dmg.
All you gotta know is that the GW items apply 40% healing reduction. Both Chemtech Putrifier and Morellonomicon applies GW by dealing magic to the enemy champions, whilst Thornmail applies GW when champions auto attack the player with Thornmail.
All three of them can also increase the effect to 60%. For Chemtech Putrifier it's healing or shielding allies. For Morellonomicon they gotta be under 50% of their max hp. For Thornmail your enemies got to be immobilized.
There's not much you can do against anti-heal, it's a counter build item. Things you can do however is dodging abilities so that GW doesn't apply on you. That way atleast you still get full benefit out of the heals from landing Q's and using your R.
EDIT: As of patch 11.18 when using R, Grievous Wounds gets removed from all targets before applying the ultimate heal.

Although I haven't reached the hundreds of games others might have, in all the games I've played as Soraka (about 15 or so games for now) I'm only able to build my items up to ardent censer and unholy grail. I have never had enough gold to complete either of the last two items and most of the time, I end the game with just one or two initial items for building archangels staff and I don't think I've been able to start building deathcap even once, though reading through the guide again, it seems I should have been focusing on deathcap first and then staff
Do you have any suggestions about what I can do? I've looked up guides for better gold generation but as far as I can tell, I'm already doing as many assists as I can and attacking towers and champs whenever I get the chance to get gold from spellthief's dagger but it just isn't enough. My avg gold generation in about a 25 minute game seems to be around 8k or so.

For Soraka you indeed build the Deathcap before Archangel's, with other more heavier mana cost champions (such as Nami/Sona) you'll want to build Archangel's first.
In terms of the build, it's a hybrid build between supportive and carry, you first build your Ardent and Athene's with Lucidity boots somewhere along the way (depending on your backs and how much gold you have to spend) and then you work towards your carry items (Rabadon's Deathcap and Archangel's Staff).
Now supports generally speaking don't have a high gold income even with a gold generating item that assists them in keeping their income somewhat relevant. The main reason for that is, you don't cs, every other role has their own cs or jg camps to farm, leaving you with alot less gold income. Now if one chooses to play a dmg carry support and gets alot of kills throughout the game, one can have a higher gold income due to getting kills.
All that being said, alot of games do tend to end before completing the full build. Which is kind of the intent of the build too, because if one chooses to buy all the cheapest items available, one will likely complete the full build, but once completed no extra stats will be gained until one decides to sell their cheaper item for a more expensive item. This is something you don't want to be doing though, you lose out on alot of gold which you could've directly put towards that item if you've been building it in the first place, meaning you would've delayed alot of your power.
The full build gives the max amount of stats you could obtain in your build for your average games but also keeps you away from reselling items for games that tend to go longer than your average games.
