I don't consider Karthus to be a huge problem when it comes to laning. Get early boots, avoid the little explosive dots he puts under you, keep your distances to avoid getting caught and cornered by his wall. If he does get ya in a bad spot, dodge his wall to the top of the bottom as needed instead of going through it. Suprising Karthus by making my own move just as he thinks he has me cornered is something I rather like doing. Karthus players are quite often way too balzy for their own goods and that can really be abused if done right. I play passively against Karthus, waiting until he over commits and then toss my stun in his face. Also, even if he is ranged, a good wall still has his use to keep him a fair distance and create a safety zone to escape.
Nidalee... As long as you know to avoid her spears, she's not a real threat. Take a few too many in the face and before you know it, she'll egg you. Stay behind your own minions at all times, her spear will hit the first target it encounters, minion or champion. She's rather soft. Counter harass her with a few combo, she dosen't have unlimited mana and will have to choose between healing or throwing spears. Her strenght is her sustainability, yours is a large amount of burst. Bide your time, wait until you have farmed yourself enough to be able to burst her in one go or ask for a gank.
In the end, the true secret with Anivia is patience and mana conservation. Make sure you always have at least enough mana to toss a stun or a wall, preferably both. It will save you. Always be very considerate when using your stun. Good players know of the lenght of it's cooldown and will wait for you to throw it out and move in while it is on cooldown. Don't give them that oportunity. Against some champions, it is best to play passively and maintain the stun as a threat. Let them get impatient, let them make the first move and toss that stun in their face when they do. Against some other champions, you must be the agressor. It is important to know the difference and to play accordingly.
