I've Jungled Soraka with success quite a few times, you just have to know a good jungling order for her.
I've played with AD Nid a few times, but not enough to be able to tell...
I've done the malph thing before and I like it, but it requires a good team.
They are **** compared to their normal roles regardless of if you've been able to play that way successfully.
Soraka is a slow jungler and a useless ganker=bad jungler.
Nidalee has 2skills that scale with AD and 4 that scale with AP. She's also got lots of short CDs so she can easily proc Lich Bane all the time for extra damage when built AP. AP is by far the superior choice.
Malphite gains damage by just going for armor and should thus not stray from the tank role. His ult is not fit for an AP caster, his E is not fit for an AP caster, his W is not fit for an AP caster. Only his Q works for an AP caster, but since all his other skills are simply meant for a tank..
Abyssal Mask is the only AP item that works on malphite.
