I can see it being viable, but generally should you HP stack only when you don't need resistances. Or at least that's what I do. I build HP but get MR/Armor when I need it.
I think I'll try it out in an AI match tommorow, not that AI matches mean anything.
But don't you always need resistances? Even though HP basically "resists" both magic and physical damage, it's far less efficient than going for armor or MR.
I'm thinking:
-Merc Treads
-Trinity Force
-Randuin's
-B. Veil
-Another tanky item, or Atma's
Or if there is not much CC at all, I might go Boots of Lucidity or Brutalizer stuck somewhere in between for that CDR for the E's CD to go down to 3.3 or so.

Atma's is a must lol. I'd say replace the banshee's veil with a FoN since you shouldn't get a BV imo unless you actually need one. And maybe still go for a warmog's or your damage is gonna suck.

But it's not just all about damage.
Warmog's won't actually give you that much damage, and a Warmog's isn't gonna be able to save you in a teamfight.
Trinity force should give you just about enough damage while tanking at the same time.
It will also be much harder to play Olaf this way, since you need to consistently pick your axes up. However, I think the end result will be better, since you can soak up tons more damage.
With this build I am aiming to be an offtank, not a tanky dps. And anyways, going Warmog's + Atma's will still make you somewhat prone to being facemelted, since you have no resists.
All I'm saying is Warmog's/Atma's/trinforce. Don't go out of your way to build extra HP if you want to tank, but also don't bother with the trinforce/atma's if you don't go for more damage...it's common sense. You wanna be a tanky DPS then build one. Don't try to tank, but still get a trinforce, that makes no sense at all.
Warmog's is disgusting. It would be much better to build all of those tanky items that let you have HP as well as some resistance or damage(Randuin's, Sunfire, Banshee's, and every Olaf needs a Frozen Mallet) This gives a combined total of 300+450+375+700=1825 Bonus HP, 50 MR, 120 Armor, Slows Enemies who hit you, Slows enemies you hit, and absorbs one spell every 45 seconds. This leaves 2 slots open for an item of your choice, as well as boots. Making Olaf a tanking machine - Without wasting all of that gold on a Warmog's which offers no resistance.

Going the standard hp-stacking Olaf way seems a bit too fragile for offtank, since you don't get many resistances.
