Here's mine -
Shadow of Rome (AMAZING game)
Harry Potter and the Philosopher's Stone (For GBC, the other versions sucked - this one was a JRPG style RPG which worked really well, I loved that game so much and, I guess, properly introduced me to the RPG genre)
Kingdom Hearts 1&2
League of Legends
Ratchet and Clank 3 (I have the whole series, but that was my favourite)
Borderlands
I can't think right now, there's probably more though.

Oh god I remember that Harry Potter game, I had that too. I was ****ing terrible at it and I don't think I ever finished it.
I used to love Kingdom Hearts, but I've kind of lost interest in it a bit lately. The endless ****py spin-off games on as many different handhelds as possible really do not do it any service. Last time I tried to play through KH2 I got bored and stopped playing.
Also loved Ratchet and Clank 3 when I was younger. One of my best friends got me to buy it with promises it was hillarious, and it was. Haven't bought the more recent games in the series though.

I liked KotOR but I'm not entirely sure it was 'best game ever' material.
I didn't have Crystal, but I spent a good portion of my childhood on Gold. I think that was the only poke game where I legitimatly trained up a full party of level 100s without cheating. Feraligatr ftw.
Chrono Trigger is awesome. Fight to get new skills, the old heal at savepoint.
People say that Witcher 2 is epic. I liked the first.
Final Fantasy VII: Crisis Core seems nice, I'll play now that I got a PSP.
Oblivion could be better, but they sure are working hard to make Skyrim the best thing ever.

League of Legends of course!
But seriously, if anyone is in need of a VERY good RPG but doesn't really care about graphics, I recommend Suikoden I & II for PS1.
For a racing game, I prefer Need for Speed III: Hot Pursuit and Underground (or Trackmania :)).
Shooters? Call of Duty!
As for a strategy game, I am in love with Age of Empires 2.
If you prefer turn-based strategy, Heroes of Might and Magic 3!
And of course, Pokemon games are awesome, but I guess everyone knows them :p
EDITED: Layout/spelling mistake.

RTS: Company of Heroes (OMG THE AMOUNT OF FUN WAS OVERWHELMING)
MMO/RPG: Final Fantasy, WoW...
FPS Multiplayer: Call of Duty (in general) or Battlefield (In general) Halo (ORIGINAL)....
FPS Single Player: Prey, Halo, Condemed....
3PS: Gears of War, Tom Clancy's Ghost Recon AWF, Tom Clancy's Splinter Cell, Mass Effect, Too Human, Shadow of The Damned....
Sports Games: NHL 10-12, Fight Night.
Racing: Forza, Midnight Club DUB edition, Need For Speed UNDERGROUND 1-2
My basic outline of games I could say I seriously enjoy/enjoyed. All are picked for certain features...Like CoD's multiplayer is amazing to me, the single player while fun REALLY doesn't matter when 85% of the game is based around shooting other people in multiplayer. While Halo+Prey+Condemned all had amazing single players to me...But their multiplayer features were lacking in some way. Most of the games I've suggested are "mainstream" and thus might be disliked on principal by some of you.
