Also, ren and panth aren't very good :/
I'd prolly say something more along the lines of
Top:
Lee Sin, Gangplank, Cho'Gath, Irelia, Vladimir, Nidalee
Mid:
Ryze, Urgot, Galio, Mordekaiser
Carry:
Miss Fortune, Corki
Jungle:
Shyvana, Dr. Mundo, Trundle
Support:
This is usually picked depending on your team, rather than the other team, however, a good Janna is always awesome! :O

Put AD-Kennen on top lane and you got yourself an effective counter vs Renekton.

If you want to counter Galio mid, put Soraka mid against him. Lower his magic res = less AP for Galio.
BOT:
Caitlyn can be easily countered by Sivir (+free mana on traps), Tristana is also really effective vs Cait. Urgot is probably the hardest to counter on bot lane.
JUNGLE:
Trundle is hard to counter, best choice is probably a roaming jungler with great mobility like Shaco or Lee Sin to keep pressure on the lanes and force Trundle to help the lanes instead of counter jungling,
A solid first pick IMO: Janna

Renekton and Pantheon are both heavily countered by a Poppy... But who plays Poppy anyway?.. Well, I love when enemies get Renekton first - Pantheon can still go jungling or switch to mid.
And... That leads me to my basic idea: Champions that can take multiple roles. Obviously this only works when you can actually play the roles. But it can turn out really well, when the enemy expects you to go top lane and then suddenly faces a different Champion he doesnt have the runes/masteries for.
- Cho'Gath Jungle
- Riven Jungle
- Trundle top
- Nocturne top
- Fiddlesticks mid/top
- Jungle Galio (Works surprisingly well..)
- Kennen (mid or top)
- Vlad (mid or top)
- Lee Sin (Can do anything... really)
Other than that, the safest lanes I can think of:
Support:
- Anything works.. Especially Janna
AD Carry:
- No clue, don't play
Top:
- Yorick (only very, very few actually know what to do against a Yorick in my Elo range - ~1800+)
- Nidalee (if you play it well, you can play any matchup)
- Warwick (depending on matchup you can request an early jungle gank, from there on you can hold your lane against most enemies)
Mid:
- Morgana (She can lane against anything.. Maybe not win hard, but never dies if well played)
- Ahri (Similar to Morgana, but has a few weak matchups - but even those can work if played right)
- Galio
- Ryze
Jungle: (Basically anything, that can complement your team and is resilient against heavy counter/control junglers)
- Nocturne
- Trundle
- Shyvana
- Udyr
- (Gangplank)

I disagree with the previous poster on GP top. There are so many Champions that can straight up destroy gangplank ^^

I know he used to be a pretty strong pick top is all :o

Top:
Renekton(Teemo,WW, Udyr, Ryze), Pantheon(Shen,WW, Malp), Nidalee(just farm you will be more usfull late), cho'gath(WW, Udyr)
Mid:
Galio(Talon, Pantheon), Ryze(Annie, Cassio), Morgana(Cassio, Morde).
Bot:
Urgot(push hard and dodge his E)
Support:
Janna(Alistar, Soraka, Taric as Support how out sustain her with AD carrys like Graves or Sivir that can poke good)
Jungle:
Trundle( Skarna Mundo and don't counter jungel him you don't want to meat him in his jungel)

Champions i chose not to enlist:
Warwick gets destroyed by a lot of matchups(personal favourite; Gangplank.)(hard time against ryze/kennen as well)
Gangplank, used to be my go-to top pick if i was first pick but i figured if enemy picks pantheon you dead bro, you can still get through this afk-farming maxing W though.
Olaf is very strong, but if they send ryze or Kennen you'll have a hard time.
