Ok... There is a difference between countering in lane phase and countering teamfight phase.
Shen kinda sucks top in lanephase, but causes some serious butthurt in teamfights, for example.
Best tops have to be Yoric, Lee Sin, and Olaf. Possible vlad, if he is GOOD.
Best mids are Galio, Vlad and Leblanc (why havent i seen her on this thread yet?) altho galio is countered by trading your ad and ap carries, but most ppl outside of way high elo ranked games wont do something like that just because it goes way against the meta. Morg is not on the list of LANE countering because she isnt amazing in lane... doge her q and you are set. However, in late game teamfights she can wipe an entire team almost by herself... THAT is the reason she is permabanned.
Best junglers are Mundo, Noct, and shaco, even tho he is also permabanned. Other good junglers include olaf, udyr, shyvana. Really most of these are interchangable depending on enemy team comp, your team comp, and skill of the jungler, but im really going to have to stick to mundo as #1, as proved in IPL4.
Best support depends on the supporter playstyle and how you want the lane to run. Zilean and Maokai are best for zoning out, Blitzcrank is the best if you want to run a Kill Lane, Alistar is very aggressive and used if your teem needs an OffTank, Lulu is just ****ing irritating, and for the traditional meta of "heal or shield" Soraka, Taric, and Janna are the best. You shouldnt worry about countering a support tho...
Ad carries depend entirely on their supports. The best one might be Corki, but Cait is really irritating, and a good sivir is crazy powerful. Really bot lane isnt the lane you worry about countering too much, it is decided by playing smart.
As far as hard counters go, for top its hard to hard counter a Lee Sin or an Olaf (lol at that sentence). For jungling, you counter based on what champ can counter jungle most effectively. Mundo is crazy at counter jungling (cause Mundo goes where he pleases) and Skarner is pretty much useless if he doesnt have bluebuff at start. So you counter him by stealing his bluebuff and destroying his jungle potential. If you dont, well, your bot lane is going to be seriously hurting. Mid counters, Galio is good counter for most AP carries, also Akali and Katarina are good for it too. They can handle most midders because of shunpo and smokescreen.

ofc there isn't but there are solid picks that can't really be hard countered.
And regarding Overmyynd:
Le Blanc is no good FP lol. counter her to death.. kassa, ahri, galio, cassio they all do decent to good.

The only champion I would say is uncounterable is Lee, simply because no matter what you do he does not LOSE the lane, he might not as good as some champions, but he faces pretty much all champions top and can either beat them or not lose.
Also I think Shen might be semi uncounterable.
Also thoughts on Alistar as a top? It seems to me he just heals and is perfectly safe, even if he doesnt really do anything with all the farm he's getting :P

Udyr. Why the hell did no one mention Udyr in two pages? He's virtually impossible to counterpick top and even if they somehow do you can just swap your runes and masteries, take Smite and go jungle instead.

I have yet to face some1 that is actually able to get her out of the lane.
so far I've played against several people that are really good at dem champs and I never had real probs
